Nut Butter squares
I know how it goes – mid afternoon, a couple of hours since lunch and a few hours until dinner time…. but what to have? Don’t get caught out and end up with a nutritionally devoid shop-bought muffin or a “healthy” packaged cereal bar that actually has more sugar than a can of full fat Coke…… make your own healthy snacks and take them with you! These are so quick to make and should give you enough snacking options for a week with one batch. So make on a Sunday afternoon and enjoy Monday – Friday guilt free!
100g coconut sugar
80g agave syrup
80g sugar and salt free nut butter of your choice – I used Whole Earth three nut butter but feel free to go for pure Peanut Butter if you prefer!
100g puffed wholegrain oats (I used Rude Health)
Melt the sugar, syrup and nut butter in a pan until blended and it has a thick liquid consistency. Don’t allow to burn. Remove pan from the heat, stir in the oats and press into a baking tin. Place in the fridge for at least 3-4 hours, then remove and cut into slices. Should kept in an airtight container for 5 days. If you can make them last that long……
