Ingredients (to make 2 Bakes – double this to make 4)
2 tablespoons nut butter of your choice
2 tablespoons maple syrup
2 tablespoons coconut oil
5 scoops of Multipower 100% Pure Whey Protein in Rich Chocolate Flavour
1 teaspoon baking powder
Milk of your choice to taste (I used almond)
Pre-heat your oven to 160 degrees (it is important it isn’t too hot to keep the dough-like consistency of the puddings). Melt the nut butter, maple syrup and coconut oil gently in a saucepan. Melt until the mixture has a liquid consistency but do not let it start to boil. Remove from the heat and mix in the Multipower Protein Powder and baking powder and stir until well combined. The mixture will now look quite dry – crack the egg into it and mix well, then add enough milk to give it a liquid consistency. You should be able to pour the mixture – any thicker and it will come out too dry. Divide the mixture evenly between ramekins greased with a little coconut oil and bake in the oven for 7 – 8 minutes and then check. If they are slightly crispy/hard on top but appear to be molten underneath then this will give you a gooey/melty soft cookie texture, if you prefer more of a crumbly cookie texture bake for around 10 minutes but check throughout baking process that the top does not burn.
For an even more “chocolatey” hit you can chop a Multipower 53% protein bar in Chocolate, or a Multipower Power Layer bar in Caramel Peanut Crunch into small squares, and stir a few into the mixture once in the ramekin before popping in the oven, and then garnish with a few more squares as soon as you remove them for a melted chocolate chip sensation.
Once removed from the oven, allow to cool slightly (if you can contain yourself!) and then enjoy!
