I love the flavours of Mexico….. Nachos, tacos, cheese toppings….. it may all be delicious, but it can often be packed with calories and fat. So I wanted to make a dish with all the flavour, but with plenty of goodness instead of naughtiness! I’ve made this a veggie version as I am a vegetarian, but you could easily add chicken to this dish if you wanted extra protein.
I love being a part of the online fitness community – it is both motivating and inspiring to be a part of the journeys of so many like minded individuals. What is even better is getting to meet some of these bloggers/vloggers in person and earlier this year at the Charli Cohen catwalk show I was lucky enough to meet health, lifestyle and pilates blogger Lottie Murphy. So when Lottie announced she would be hosting a Sunday morning pilates class and brunch in central London I knew I had to go.
On Sunday 20th May myself and 11 other girls descended on Six3Nine in Covent Garden for Lottie’s event. A beautiful and functional Personal Training space, it was the perfect venue for a 50 minute “Body with Lottie Murphy” pilates class that worked our entire body and for me at least really pushed my flexibility and core strength.
It is impossible to ignore the almost meteoric rise in popularity of green tea over the past few years – it has gone from being hidden in corners of oriental supermarkets to a health and well-being staple, so it is no surprise that its stronger, more powerful cousin matcha is fast catching up on the must-have superfood list. Boasting 137 times more antioxidants than traditional green tea, the ability to improve energy, assist in weight loss and aid concentration, matcha’s credentials are extremely impressive.
So when Lovesuperfoodtea.com asked me to create a recipe with their organic matcha green tea I couldn’t refuse! After a little experimenting in the kitchen the result is my Matcha Coconut muffins.
Sometimes you just discover a brand or product that you fall in love with instantly – and one such brand for me is NOM (Naturally Organic Matters) and their range of bars.
Before I go on I think it’s important to say that I am neither sponsored by nor affiliated with Nom – this post is purely my pesonal opinion!
I first tried these bars over a year ago when I spied them on the shelves of Planet Organic on Westbourne Grove and have been hooked since. [Read more…] about Nom Nom Nom!
Nut Butter squares
I know how it goes – mid afternoon, a couple of hours since lunch and a few hours until dinner time…. but what to have? Don’t get caught out and end up with a nutritionally devoid shop-bought muffin or a “healthy” packaged cereal bar that actually has more sugar than a can of full fat Coke…… make your own healthy snacks and take them with you! These are so quick to make and should give you enough snacking options for a week with one batch. So make on a Sunday afternoon and enjoy Monday – Friday guilt free!
Lighter Strawberry cheesecake
Pursuing a healthy lifestyle doesn’t have to mean boring, bland mealtimes missing out on all your favourite treats.
