One of the biggest excuses I hear when it comes to people making poor dietary choices is time – “I’m too busy to eat well/cook/meal prep/follow a recipe/grab healthy snacks”….. sound familiar? I must hear this several times a week, which is a shame because for the most part it isn’t true. Healthy eating is not impossible on the go, and the Grab and Go and Power Packs of Acti-Snack combinations are a perfect example of this. So when Acti-Snack asked me if I could create a healthy recipe using their additive and sugar-free mixes I couldn’t wait to get experimenting in the kitchen…. and the result are these Fit Food Muffins!
Some things in life were meant to be together – strawberries and cream, Kim and Kanye, long baths and candlelight and of course coffee and walnut. To me its a classic flavour pairing that never fails, so when Multipower sent me a tub of their Coffee Caramel 100% Whey Protein and asked me to create a recipe with it, there was only one choice as far as I was concerned. Who doesn’t love Brownies? I mean genuinely, who wouldn’t want to enjoy a warm, rich, moist chocolatey square with their afternoon tea or for dessert? In my 30 something years on this planet I’ve yet to meet anyone who can look me in the eye and say they don’t like Brownies – because there’s nothing not to like! Well, apart from the huge amount of sugar, fat and calories that your typical shop-bought Brownie contains. My regular Blog readers will know I love a recipe challenge, and I’m really pleased with my latest creation, which came about thanks to Creative Nature Superfoods who asked me to create a recipe using a superfood that they would send me. So when a tub of Maca powder turned up at my door, I couldn’t wait to start creating in the kitchen, and the result is this healthy, nutrient packed Maca and Maple Loaf Cake.
So how do you make it?
I was delighted when Sports Nutrition company Bulk Powders got in touch and asked me to create a recipe for them using a mystery flavour of protein that they wanted to send me…. I do love a cooking challenge!
So when I received several sachets of their high quality Strawberry flavour whey protein, I decided to create a healthy muffin recipe that you can enjoy as the perfect post workout refuel, or to satisfy your sweet tooth mid-morning (without worrying about the calories). But despite having great macros, good nutritional benefits and being easy to make, to me by far the best thing about these Bulk Powder Berry Protein muffins is the fact that they are pink! A protein treat to match my gym outfit – perfect!
